Refreshing Mango Cheesecake
I baked this Mango Cheesecake last week as SIL’s birthday cake. The response was very good. Many asked for a second slice. And I even found myself MISSED MY MANGO CHEESECAKE during lunchtime today! I’ve decided to make this again. The kids are all very happy hearing that I’m going to make it again. Mel and Ian both asked me to make this for their birthday as well. LOL!

I baked the second time, today removed from pan, disappointed. First time having some unexpected failure on my cheesecake… Glad it wasn’t for selling. LOL! That’s why stop my bakery shop, it gives less satisfaction. :p

I have a new york (baked) cheesecake recipe that is perfect. I want to transfrom it into a mango cheesecake with pureed mangoes in the mixture and marbled mango puree on top.
