Making Enzymes

Okay, here is the result of my apple enzyme. It was quite successful, in terms of the smell and the produce. However, I think I probably put too much of lemon and too little sugar. It was very very sour and not sweet enough to call it tasty!

Here is a little of the juice to show you:

Very strong alcoholic smell, which I quite like. LOL!

My second batch was made using white dragon fruits. Well, actually I wanted to get the red one, but didn’t realized I bought the white ones. I bought 5 from Carrefour (nearest to my office mah). Again, not quite happy with the quality. Anyway, I used up 4 lemon, which again, I am worried if it is too much. A few more days to go, before I can tell the results. This time, I went to Chinese Medical Hall to buy that “Sliced Iced Sugar” (literally directly translated). The lady asked me to use “Red Sugar” instead, so I bought a pack.

I checked with MSau 2 weeks after I made this, only realized that I put too little sugar!! I now worried if it would be too sour and not tasty like the apple enzyme. :(

This is how it looked when I finished layering the fruits, i.e. day-0. Looking back at the photo again, I have to agree that the sugar is just too little leh!

I asked MSau, why put so much sugar, by right after concentrating this amount into that little juice, would be unbearably sweet. After she explained, only I understand… The sugar is kind of like food for the good bacterial and will be consumed in the fermentation process, to produce the enzyme. So, at the end, the sugar is not much left! Aiyoh, I am not giving enough ‘food’ for the bacterial, so how? Does it mean my enzyme is not as good as it should be? Hmm…

Actually 1 week after I made the white one, I asked my mom to get me the red dragon fruit from the wet market. Just 5 biji, and it is so so so much. I have to use 2 containers, and not enough sugar.

This time, I did try to put more sugar, but I think still not enough (after checking with MSau). Aiyoh!!!

Anyway, look at the red ones here… Day-0, cannot differentiate the sugar from the fruit hor? They are both red anyway.

1 day later, so much ‘juice’ already!!

I am really looking forward to the red one, which is expected to be ready in Christmas. I love the red color!! I should have put in more sugar ler… or less lemon! Ya, I used 5 lemon for this batch. I thought I like the lemon smell mah.

But hor, with the dragon fruits, the initial smell was awful. Only when after 2 weeks, the alcohol smell gets stronger, the smell then got better. I think Dragon Fruit is not a fruit with strong nice smell, hence the smell during the process wasn’t that great? Dunno…

      AH! Good news! Just harvested the white enzyme. Smell so so so good. Haven’t tasted it yet, coz will want to sieve it again tomorrow. I have very choosy kids (and myself too!).

      My babysitter recommended pineapple. Enzyme made from pineapple is superb in cleaning oily plate, pan.
      Also, you can use lemon grass and pandan leave for the nice smell.
      I have been using the enzyme for mopping floor….and 2 days ago, I asked my maid to use the enzyme to soak the kitchen ventilator fan and grill, which is oily and sticky. Soak in boiling hot water and add a small cup of enzyme. The result was superb ( I guess, lots of scrubing involved as well)…but the grill does look shiny

      By the way, if you need the recipe to make the enzyme, let me know. Will email to you. It also include instruction on how to make this enzyme into cleaner, fertilizer, insecticide etc.
      The recipe that i have uses brown sugar.

      brown sugar (1 ratio) kitchen waste (fruit/vege) (3 ratio) water (10 ratio) – to be fermented for 3 mths.

      Vivian: The Enzyme you mentioned is for cleaning right? Yes, I need the recipe, pls share more (email is fine)?! I think I need insecticide that can drive away termites, got such things or not? LOL!

      Joey: Yes, very fun to make and easy too. I just had a cup of it. Taste just like wine, and it is warm the moment it reached my stomach. I feel heat on my face now. I think I am drunk with my homemade enzyme!!
