My first attempt on enzymes

Published by suzette at 9:06 pm under All,Food/ Shopping,Miscellaneous

I read and heard a lot about these fruit enzymes Also garbage enzymes…

Finally, chatted with MSau and searched for the recipe, finally attempted this a week ago.

Actually what prompted me to make it, is a batch of bad apples that I bought from Carrefour. I bought 2 packs of expensive apples (so it is not true that 一分钱一分货), they turned out to be really awful. Not crunchy, not sweet, have bad smell. I think they are too ripened, or going to rot soon. One pack was Fuji Apples, another one was Royal Gala. Both were bad.

Apples

I just couldn’t eat them. Attempted on 2, and had to throw half way. Feel sayang to throw them all away, so I thought maybe can turn it into enzymes. Well, every article tells me that I should us fresh apples… I really don’t know what will happen to mine since my apples are not that fresh nor nice.

I was told to use that 冰片糖, directly translated as “iced sliced sugar”, which I have no idea what they are. I was told not to use white sugar, and I have only these brown sugar at home, so I used it instead. But hor, it makes my bottle looks really black and dirty/dark:

Apple Enzime Day 1

The next day, when I checked the containers, I found that the brown sugar melted and became really dark. Then, the article said, “It is alright to have the whitish stuff on the surface but not good to have blackish stuff”.

Uh oh! How do I differentiate my darkish brown sugar effect with that ‘blackish stuff’ mentioned in the enzyme making process??!! I guess I just take a judgement call, as long as there is nothing fungus like looking stuff, it should be safe to consume gua?

Will update again 2 weeks later, whether it turns out okay or not. So far, it smells really good, but a bit alcoholic though…

Sorry to hear about the apples. Had the same experience some time back. It’s unfortunate but my experience with Carrefour’s fresh products hasn’t been very good.
