Banana Muffin
This is my first baking in 2009… a bit too sweet to my liking, but still edible. LOL!

It is very simple with recipe below, but I would suggest to reduce sugar by half if you don’t like it very sweet…
4 ripe bananas
1/4 cup olive oil
1 cup sugar (reduce if you don’t like it too sweet)
2 cups flour
1 tsp. salt
1 tsp. baking powder
1 cup choc chips (or chopped walnuts, or both!)
• Mash bananas. Add oil and sugar. Mix well.
• Add flour, salt, and baking powder together and add to the banana mixture. Mix until the flour is blended (do not beat).
• Pour into muffin pans and bake at 180°C for 20-25 min or until a toothpick comes out clean.
Makes 1 Dozen Muffins

These look to be quite tasty, and the banana will give them a nice flavor that is not too strong. I had not realized that muffins had to be made in those muffin pans until now, but it makes sense that they have to get their shape from the container they are in. I may use this to make a set of muffins.

Armen: yup, the banana has a nice fragrant! You don’t need that pan if you use smooth sides muffin cups/papers. The pan is to prevent the paper from smoothed out when cake expands.
Armen/Golf Irons/PepsiTwist: if you make this muffin, I would strongly advise reduce sugar by half – even the sweetest tooth in the family thinks if is too sweet!!
